Bikini Recipe

Yields 10 guests

To make the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Drink (yields 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch

Method

For the Citrus Syrup: Place the listed ingredients in a pot, bring to a simmer, stirring to dissolve. Then, remove from the stove allowing it to cool down fully. Pour into an sterilised bottle, close it keeping it chilled, it can be stored for around a month.

Preparing the Batch Mix: Mix the specified spirits and syrup in a sizeable container, allow it to infuse for one hour, then pass it through preferably using muslin, making it fully clarified.

For serving: Add 85ml of the cocktail base into a stirring glass containing ice, and agitate lightly for a minute to cool it down. Strain into a frosted cocktail glass or similar, decorate with a few cranberries adding the final touch by giving it a light spray of mandarin oil over the drink.
